Produced in Sardinia in the late autumn season (October/November) when, on average, the only flowers in the mediterranean scrub are those of the Arbutus plant. Obtaining a good product with its best qualities is only possible when the autumnal season has been particularly mild and, sometimes, not even under these ideal conditions is possible to avoid the damages of a sudden frost or hail which can ruin the flowering and reduce or even avoid the production of this unique honey. The difficult in the production together with the particular taste make this honey a fine product, a product for true connoisseurs and honey lovers. This divine honey with its entrancing tastes is worthy of the most refined culinary attentions.
In the Sardinian traditional gastronomy it excellently combines with Sas Seadas, with fresh Ricotta, with little seasoned Caciottine pecorine, with the recent erborinati cheeses and with lettuce (according to ancient food principles).
The smell of this honey is bitter, penetrating and pungent, its flavor reminds that of bitter almond, the color is amber when the honey is in its liquid state and hazel when it crystallizes. This fine nutraceutical honey that bees give us is often required from people who need a help from nature to treat asthmatic conditions, throat inflammations, bronchitis and also to favor diuresis (this due to the presence of arbutin, a substance with disinfectant properties).
The plant has also be found to help as an anti scrofulus, anti rheumatic and to have purifying, stimulating and sudoriferous properties.
